The Jalapeno chili originally comes from Mexico. The term "Chipotle" goes back to the type of processing and means: smoked chili. The Aztecs dried their chili peppers over mesquite wood for several days 9000 years ago. This created the aroma that is so typical of Mexican cuisine. Air drying is not suitable for these thick-fleshed chillies - they would start to get moldy. Smoking is the perfect preservation method here.
