The highland pepper for this particular specialty comes from the southern Indian state of Kerala.
The Malabar Coast has been the world's premier pepper-growing region for over 2000 years. We harvest in the sparsely populated nature reserve (lake periyar) of the country. Tigers, elephants, buffalos and leopards also have a home in this unique national park - hence the common name: Tiger Pepper !
This mountain region offers many family farms a good livelihood through pepper cultivation.
After the laborious harvest, the pepper is sun-dried, cleaned and sorted.
After arriving in Germany, the highland pepper is cold-smoked over beech wood for about 7 days . This creates a very harmonious combination of the noble pepper aroma with a fine smoky note.

Use : for strong vegetables, grilled dishes, legumes, BBQ grill sauces, fried potatoes, tofu Attention: please freshly ground
Tip : add at the end of the cooking time so that the aroma is fully preserved.
